Venison for my wedding

Venison for my wedding Can't Post

I'm getting married on March 5 next year. We are just sorting our menu to give it to our catering company, they are happy to use homekill, and that's good. We are cooking a couple of sheep and a pig, my question is that we would not mind including a little venni in the menu, we are just not sure how to make them cook it, back steaks, etc.
What could be done with the rest? There are ideas, it's a casual buffet. The number of guests is 60 people.
Getting venison should not be a problem, as our family has a farm in Wanganui, where there are many deposits.
We would be very grateful for any good ideas for cooking venny dishes.

Makes a bit of venison go a long way. Good as a starter dish. Can prepare in advance. One of my favourite ways to share with family and friends.
